  7. If it's Chinese stainless, it's probably something similar to 420. If you don't have a heat treating oven, don't even bother with it....you will not be able to come close to the time/temp/soak processes to change it from what it is to something different and usable. You can, however, use it to practice grinding, if it's soft enough. -Mark
