BenR.T. 12 Posted November 9, 2012 Share Posted November 9, 2012 This one has a curly Koa handle, tapered tang, and a clay quenched blade. The OAL is 12 7/8" with an 8" blade. danpiotte 1 Posted November 9, 2012 Share Posted November 9, 2012 Having 10 years in food service.( hotel kitchens) I can say that is a nice pattern for a chefs knife. I wonder though if the balance and the overall weight might be improved by tapering the tang. Without a bolster to match up with this would be an easier task than with one.
