here's one I started about 2 1/2 years ago, and just finished up for a friend to give to her partner for Christmas. 1095 blade, copper collar, steel guard, and ebony handle:

I love it for all the usual reasons: the subtle curves, beautiful finishes, excellent carving... The blending of three cultural influences (and making it work) is impressive.

it's very simple - thick, regular ashi (about 1/8th thick) mirrored on both sides, steel heated to 1500f, and quenched in cold veggie oil... the heavy ashi and cold oil evens everything out.
