Which high carbon steel should I choose?

I can easily get 1075, 1085 and 1095, but I don't know enough to choose between them. Which one is best for a beginner doing only stock removal. I want to make simple fixed blade knives.

I would start with the 1075 or 1084. Both are super simple when it comes to heat treating.

 

Edit: Doesn't matter which you choose. They both make great knives.

There is low and "regular" manganese 1075 out there. The regular manganese will be less tricky to heat treat for a beginner.

My understanding is that 1095 would be the hardest of the three for a beginner to heat treat due to how quickly you have to get it properly quenched (right at one second) compared to the other two alloys
