80CRV2 Western Chef’s Knife

Finished this guy up today… 

Still not perfect, but I feel like I’m making solid progress. Forged from 80CRV2, it has an 8” blade, is ~2-3/8” tall at the heel, a continuous distal taper, and an edge thickness of .001” and I finished the blade to 400 grit and then with a red scotchbrite pad.

Looks pretty cool!  Does that fighter-style sculpted handle cause problems on a cutting board?  That would be my only concern.  I made a nice-looking chef knife a couple of years ago that can't be used easily, because there's not enough room between the end of the handle and the cutting board.  I have to hang the board over the edge of the counter to get a full stroke without hitting my knuckles.  :wacko:

That was one of the things I had to change from my initial forging was to reprofile the handle to not interfere with the cutting board.  It’s pretty comfortable to use and doesn’t get in the way thankfully
